WOW Pea Salad
SALAD
2 cups fresh or frozen Peas, rinsed and drained
1 cup fresh or frozen corn, rinsed and drained
1/2 cup onion finely chopped
1 cup celery finely chopped
1/4 cup green pepper finely chopped
1 jar chopped pimiento
DRESSING
1/2 cup Maple Syrup
1/3 cup applesauce or blended soaked raw cashews
1/4 cup vinegar
salt and pepper to taste
Mix first ingredients together in medium size bowl.
Whisk dressing together in a small bowl.
Add dressing to salad and chill overnight.
