Maple Potato Spread
Serving Size : 8
Ingredients :
1 large sweet potato -- peeled and quartered
1 small onion -- peeled and quartered
1 tablespoon tahini
1 tablespoon maple syrup
3 dried figs -- finely chopped
Preparation Method :
1. Steam sweet potato and onion pieces until soft.
2. Transfer to a food processor with remaining ingredients. Blend until mixture is thick and smooth. Pour into a small container.
3. Keep covered and refrigerate until ready to serve.
Yield: "2 cups"
