Blueberry Cheese Cake Pudding

Ingredients

1/4 cup part-skim ricotta
1/4 cup fresh blueberries*
1 teaspoon fructose or 1/2 teaspoon honey
1/2 teaspoon chopped pecans or walnuts
1 teaspoon vanilla extract

Instructions

Mix the cheese, fructose, and vanilla. Add blueberries and nuts on top.
Enjoy cold!

* If you use stevia instead of the fructose or honey, you can add 1/2 cup of
blueberries instead of 1/4 cup. Be sure to add just a little stevia, since
it's very sweet, and then adjust.
