Colourful Pasta Bean Salad

Makes 4 servings as a main dish.

Ingredients :

3 cups cooked small shaped pasta such as penne, spirials or rotini
(I used Penne one time and spirials the next for the kids)
1 cup cooked pinto or kidney beans, drained and rinsed ( i used pinto)
1/2 cup chopped green pepper (1 used yellow just for color)
1/2 cup sliced green onions
1 cup chopped ripe tomato (you can used canned if no fresh on hand)
1 tbsp. olive oil
2 tbsps. flavored vinegar
1 tbsp. chopped fresh oregano (or 1 tsp. dried)
2 tbsps. grated parmesan cheese
1 tbsp. chopped fresh basil (or 1 tsp. dried)
fresh ground black pepper to taste

Directions :

1. Combine all ingredients in a large mixing bowl.
2. Mix well and chill until ready to serve, up to 1 day.
3. Serve on a bed of mixed greens.
