Recipes for Diabetic People - Shredded Zucchini

Shredded Zucchini

Yield: 4 side-dish servings

Ingredients:

2 small zucchini (5 ounces each), shredded (2 cups)
1 tablespoon butter or margarine, cut into pieces
1/4 teaspoon salt

Directions:

1. In 10-inch skillet, combine zucchini, butter, and salt
2. Cook over medium-high heat, stirring frequently, until tender-crisp, about 3 minutes.
