Rice with Tomato - Ruz wa Banadoura

Ingredients :

1 small onion -- chopped
1 tablespoon olive oil
1 small ripe tomato -- diced
2 cups water
1 tablespoon tomato paste
1/2 teaspoon black pepper
1 cup rice

Method :

1. Saute the onion in the olive oil until transparent.

2. Add the diced tomatoes and cook for a couple of minutes.

3. Add the water, tomato paste, and the pepper.

4. Bring to a boil, then add the rice.

5. Cover and simmer over low heat for 20 minutes or until rice is tender and the liquid has been absorbed.

Yields: 4 servings.
