Ingredients :
1 cup onion -- chopped
4 garlic cloves -- chopped
1 1/2 cups mushrooms -- quartered
2 carrots -- sliced
1 cup green beans -- cut into 2-inch pieces
2 cups acorn squash -- chopped
2 cups canned tomatoes
1 (29-ounce) can hominy
1 pinch salt
2 tsp. dried cumin
2 tsp. dried oregano
Black pepper -- to taste
Cilantro, fresh -- to taste
Preparation Method :
1. Brown the onions and garlic in a little oil.
2. Add the vegetables to the browning onions and garlic.
3. Add the tomatoes and cook until vegetables start to soften about 10-15 minutes).
4. Add the hominy, salt, cumin and oregano.
5. Cook until all vegetables and the hominy are soft (another 10-15 minutes).
6. Top with black pepper and chopped cilantro.
