Slow Cooker Veg Barley Casserole

Ingredients :

1  Cup  Uncooked Pearl Barley
1/2 Cup  Spicy Vegetable Juice -- [V-8 Spicy]
1/8  Teaspoon  White Pepper
1 Cup  Chopped Celery
1 Cup  Shredded Carrots
1 Bell Pepper -- Red Or Green, Chopped
1  Large  Red Onion -- Chopped 
2 Cloves  Garlic -- Minced
1 Ready To Serve Vegetable Broth -- (14 Oz. Can)
1/4 Cup  Nuts -- Toasted Pine Nuts, Toasted Pumpkin Seeds, Slivered Blanced Almonds, Or Chopped Walnuts

Preparation Method :

1. Combine all ingredients except nuts in a 4 quart slow cooker. 
2. Cover and cook on low for 6-8 hours until barley and vegetables are tender. 
3. Sprinkle with nuts just before serving.
